📌 Ingredients:
For the Steak:
1 large T-bone or porterhouse steak (1.5–2 inches thick)
Kosher salt & coarse black pepper
1 tbsp avocado or canola oil (high-heat oil)
3 tbsp unsalted butter
3 cloves garlic, smashed
2 sprigs fresh thyme or rosemary
For the Veggies:
1 bunch asparagus, trimmed
1 cup pearl onions (peeled)
1 tbsp olive oil
Salt, pepper, and a pinch of garlic powder
🔥 Instructions:
1. Prep the Steak:
Let steak sit at room temp for 30–45 mins.
Pat dry, season generously with salt & pepper on both sides.
2. Sear It Right:
Heat cast iron skillet over high heat until smoking hot.
Add oil, then lay in steak. Sear 3–4 mins per side for medium-rare, flipping once.
Add butter, garlic, and herbs. Baste for 1–2 mins.
Optional: Finish in a 400°F oven for 3–5 mins for thicker cuts.
3. Rest & Slice:
Let steak rest for 5–10 mins before slicing to keep all that juice locked in 🔒
4. Cook the Veggies:
Sauté pearl onions in olive oil until golden & soft. Season with salt, pepper & garlic.
