🥗 Greek Orzo Salad 🍅
A refreshing Mediterranean dish! 🌿✨
Ingredients:
1 cup orzo pasta
1 cup cherry tomatoes, halved
1 cucumber, diced
1/4 cup red onion, finely chopped
1/2 cup Kalamata olives, sliced
1/2 cup feta cheese, crumbled
2 tbsp fresh parsley, chopped
2 tbsp fresh dill, chopped
For the Dressing:
1/4 cup extra virgin olive oil
2 tbsp red wine vinegar
1 tsp Dijon mustard
1 clove garlic, minced
Salt and pepper to taste
Instructions:
Cook the orzo pasta according to package instructions. Drain and rinse with cold water to cool.
In a large bowl, combine the cooked orzo, cherry tomatoes, cucumber, red onion, olives, feta, parsley, and dill.
In a small bowl or jar, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, salt, and pepper.
Pour the dressing over the salad and toss well to coat.
Chill in the fridge for 30 minutes before serving for best flavor!
