Rainbow Shrimp Salad Bowl

Ingredients:
6–8 cooked shrimp
1 boiled egg, halved
½ cup corn
½ cup roasted pumpkin or sweet potato
A few cherry tomatoes, halved
A handful of blueberries and strawberries
Mixed greens or lettuce
Instructions:
Arrange the greens as your base.
Add shrimp, egg, veggies, and fruits on top.
Drizzle with your favorite light dressing or a squeeze of lemon.
Serve chilled and enjoy!
