Blackened Shrimp Stuffed with Spicy Sausage

Ingredients:

1 lb large shrimp, peeled and deveined (tail-on, butterflied)

6 oz spicy andouille sausage, finely chopped

1 tablespoon olive oil

2 cloves garlic, minced

1/2 small onion, finely chopped

1 tablespoon Cajun seasoning

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1 tablespoon fresh parsley, chopped

Toothpicks (for securing shrimp)

Directions:

Heat olive oil in a skillet over medium heat. Sauté onion and garlic until translucent.

Add chopped sausage and cook until slightly crispy. Remove from heat and mix in parsley.

Pat the shrimp dry and sprinkle evenly with Cajun seasoning, smoked paprika, and black pepper on both sides.

Carefully open the butterflied shrimp and stuff each one with a small spoonful of sausage mixture.

Secure shrimp closed with a toothpick to hold the stuffing in place.

Heat a large skillet or grill pan over medium-high heat. Sear shrimp for 2–3 minutes per side or until blackened and cooked through.

Remove toothpicks before serving. Serve hot with lemon wedges or a spicy aioli for dipping.
