Loaded Corned Beef Taters 🥔🧀
Ingredients:
4 medium russet potatoes
1 1/2 cups cooked corned beef, shredded or chopped
1 cup shredded cheddar cheese
1/4 cup sour cream (optional)
Chopped chives for garnish
Salt & pepper to taste
Olive oil
Directions:
1. Preheat oven to 400°F (200°C). Scrub potatoes, poke with a fork, rub with olive oil, and bake for 45–60 minutes until tender.
2. Slice potatoes open and gently fluff the insides.
3. Fill with corned beef, top with cheese.
4. Return to oven or broil for 5 minutes until cheese is melted.
5. Sprinkle with chives, salt, and pepper. Add sour cream if desired.
