Double-Stack Cheeseburger with Spicy Mayo
Ingredients (Serves 2)For the Burgers:
1 lb (450g) ground beef (80/20 for juiciness)
1 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp onion powder
4 slices cheddar cheese (or your preferred cheese)
2 brioche buns, split and toasted
1 tbsp vegetable oil (for cooking)
For the Spicy Mayo:1/4 cup mayonnaise
1 tbsp hot sauce (like Sriracha or your favorite)
1 tsp smoked paprika
1 tsp lemon juice
1/2 tsp garlic powder
Salt to taste
Optional Toppings:
Lettuce leaves
Sliced tomatoes
Sliced red onion
Pickles
Instructions
1. Make the Spicy Mayo:In a small bowl, whisk together mayonnaise, hot sauce, smoked paprika, lemon juice, garlic powder, and a pinch of salt. Adjust seasoning to taste. Set aside.
2. Prepare the Burger Patties:In a bowl, mix the ground beef with salt, black pepper, garlic powder, and onion powder. Divide the mixture into 4 equal portions (about 1/4 lb each) and shape into thin patties, slightly wider than the bun to account for shrinkage.
Press a small indent in the center of each patty to prevent puffing while cooking.
3. Cook the Patties:Heat a large skillet or griddle over medium-high heat and add the vegetable oil.
Cook the patties for 3-4 minutes per side for medium (160°F/71°C internal temperature), or to your desired doneness. During the last minute of cooking, place a slice of cheese on each patty and cover the skillet to melt the cheese.
4. Assemble the Burgers:
Spread a generous amount of spicy mayo on the bottom half of each toasted bun.
Stack two patties with melted cheese on each bottom bun.
Add your desired toppings (lettuce, tomato, onion, pickles) if using, then spread more spicy mayo on the top half of the bun before placing it on the burger.
5. Serve:
Serve the double-stack cheeseburgers immediately, with extra spicy mayo on the side for dipping if desired.
Pair with fries, onion rings, or a simple side salad.
Notes
For an extra smoky flavor, grill the patties over charcoal instead of using a skillet.
Adjust the heat in the spicy mayo by adding more or less hot sauce to suit your taste.
