🥣✨🥕 Healing Red Lentil Turmeric Soup for Gentle Detox
Ingredients:
1 tablespoon (15ml) olive oil or coconut oil
1 large onion (about 200g), chopped
2 carrots (about 120g), chopped
2 celery stalks (about 80g), chopped
3 cloves garlic, minced
1 tablespoon (15g) fresh ginger, grated
1 tablespoon (15g) ground turmeric
1 teaspoon (5g) ground cumin
1/2 teaspoon (2.5g) ground coriander
1/4 teaspoon (1g) chili flakes (optional)
1 cup (about 200g) red lentils, rinsed
6 cups (1.5 liters) vegetable broth
1 (14.5 ounce or 400g) can crushed tomatoes (optional, for richness)
Salt and black pepper to taste
Fresh cilantro or parsley for garnish (optional)
Directions:
1 Heat the olive oil or coconut oil in a large pot or Dutch oven over medium heat.
2 Add the chopped onion, carrots, and celery. Cook, stirring occasionally, until softened, about 8-10 minutes.
3 Add the minced garlic, grated ginger, ground turmeric, cumin, coriander, and chili flakes (if using). Cook, stirring, for 1-2 minutes until fragrant.
4 Stir in the rinsed red lentils, vegetable broth, and crushed tomatoes (if using).
5 Bring the soup to a boil, then reduce heat, cover, and simmer for 20-25 minutes, or until the lentils are tender and have broken down.
6 Season with salt and black pepper to taste.
7 For a smoother soup, use an immersion blender to partially or fully blend the soup to your desired consistency. If you don't have an immersion blender, carefully transfer batches to a regular blender (vent lid and hold top with a towel) and blend until smooth, then return to the pot.
8 Ladle the soup into bowls and garnish with fresh cilantro or parsley if desired.
