Egg Salad Sandwich Recipe
Ingredients:
6 hard-boiled eggs, peeled and chopped
1/4 cup mayonnaise
1 tsp Dijon mustard
1 tsp lemon juice
1 tbsp chopped chives (plus more for garnish)
Salt and pepper to taste
4 slices of bread (your choice: white, wheat, sourdough, or croissant!)
Butter or lettuce (optional for extra texture)
Instructions:
1. Prepare the egg salad – In a bowl, mash the chopped eggs slightly with a fork. Add mayonnaise, Dijon mustard, lemon juice, chopped chives, salt, and pepper. Mix until well combined.
2. Assemble the sandwich – Spread the egg salad evenly onto two slices of bread. Add lettuce if you like a little crunch. Top with the remaining slices.
3. Serve and enjoy – Cut in half and serve immediately. Garnish with extra chives
