Zesty Key Lime Energy Bars: A Tropical Twist on Healthy Snacking! 🌟🍋🥥

Ingredients:
1 cup (175g) Medjool dates, pitted and packed
1 cup (140g) raw cashews or almonds
1/2 cup (40g) unsweetened shredded coconut
1/4 cup (60ml) fresh key lime juice
1 tablespoon key lime zest (from about 2 key limes)
1 tablespoon melted refined coconut oil (use refined to avoid strong coconut taste)
Pinch of sea salt

Directions:
1. Line an 8x4 inch loaf pan or similar small pan with parchment paper, leaving some overhang on the sides for easy removal.
2. If your dates are dry, soak them in warm water for 10 minutes, then drain well.
3. Add the cashews or almonds to a food processor and pulse until they form a coarse meal.
4. Add the pitted dates, shredded coconut, key lime juice, key lime zest, melted coconut oil, and salt to the food processor.
5. Blend until the mixture comes together into a sticky dough that clumps easily. Scrape down the sides as needed.
6. Transfer the mixture to the prepared pan. Press down very firmly and evenly using the bottom of a glass or your hands to pack it tightly.
7. Refrigerate for at least 30-60 minutes, or until the bars are firm.
8. Once firm, lift the block out using the parchment paper overhang. Cut into 8-10 bars with a sharp knife.
9. Store in an airtight container in the refrigerator.
