🇮🇹 Tortelli di Zucca (Pumpkin-Filled Pasta)
Delicate pasta parcels filled with sweet pumpkin and dressed in a buttery sage sauce – a northern Italian classic!
Ingredients:
• 300 g pumpkin puree
• 100 g grated Parmigiano Reggiano
• Nutmeg and salt, to taste
• Fresh pasta sheets or dough for filling
• 50 g butter
• Fresh sage leaves
Instructions:
1️⃣ Mix pumpkin, cheese, nutmeg, and salt for the filling.
2️⃣ Cut pasta sheets into squares, add filling, and seal into tortelli.
3️⃣ Boil in salted water for 3–4 mins until they float.
4️⃣ Melt butter in a pan with sage, toss pasta gently, and serve hot.
