Chicken Drumsticks with Mashed Potatoes

Ingredients:
For the Chicken Drumsticks:
8 chicken drumsticks
Salt and pepper, to taste
2 tbsp olive oil
2 cloves garlic, minced
1 tsp dried rosemary
1 tsp dried thyme
1 cup chicken broth
For the Mashed Potatoes:
2 lbs (900 g) potatoes, peeled and quartered
1/2 cup (120 ml) milk or cream
4 tbsp (56 g) unsalted butter
Salt and pepper, to taste
Optional: 1/4 cup (60 g) sour cream for extra creaminess
Instructions:
Preheat the Oven:
Preheat your oven to 400°F (200°C).
Season the Chicken Drumsticks:
Pat the chicken drumsticks dry with paper towels. Season both sides generously with salt, pepper, dried rosemary, and dried thyme.
Sear the Chicken Drumsticks:
Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the chicken drumsticks and sear for 3-4 minutes per side until browned.
Roast the Chicken Drumsticks:
Add the minced garlic to the skillet and cook for another minute. Pour in the chicken broth. Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the chicken is fully cooked and the internal temperature reaches 165°F (74°C).
Boil the Potatoes:
While the chicken is roasting, place the quartered potatoes in a large pot. Cover with water and add a pinch of salt. Bring to a boil, then reduce the heat and simmer for 15-20 minutes until the potatoes are fork-tender.
Mash the Potatoes:
Drain the potatoes and return them to the pot. Add the milk, butter, and sour cream (if using). Mash the potatoes until smooth and creamy. Season with salt and pepper to taste.
Serve:
Serve the roasted chicken drumsticks hot, alongside the creamy mashed potatoes. Garnish with fresh herbs if desired.
