Seared Salmon with Creamy Spinach Sauce 🐟🥬
Ingredients:
For the salmon:
2 salmon fillets 🐟
1 tbsp olive oil 🫒
Salt & black pepper to taste 🧂
For the creamy spinach sauce:
1 tbsp butter 🧈
2 garlic cloves, minced 🧄
1 cup fresh spinach, chopped 🥬
1/2 cup heavy cream 🥛
1/4 cup grated Parmesan cheese 🧀
Salt & pepper to taste 🧂
For the sautéed veggies:
1 carrot, chopped 🥕
1/2 zucchini, sliced 🥒
1/2 cup cauliflower florets 🥦
1/2 red onion, sliced 🧅
Green beans or baby corn (optional) 🌽
1 tbsp olive oil 🫒
Salt & pepper 🧂
Instructions:
Cook the salmon:
Season salmon with salt and pepper.
Heat olive oil in a pan over medium-high heat.
Sear salmon for about 4-5 min per side until golden and cooked through. Set aside.
Make the spinach sauce:
In the same pan, melt butter.
Add garlic and cook for 30 sec.
Stir in chopped spinach and cook until wilted.
Pour in cream, bring to a simmer.
Add Parmesan, stir until melted and sauce thickens. Season with salt & pepper.
Sauté the veggies:
Heat olive oil in another pan.
Add all chopped veggies and stir-fry for 5–7 min until tender-crisp. Season to taste.
Plate and serve:
Place salmon over sautéed spinach or alongside veggies.
Drizzle the creamy spinach sauce over the salmon.
Garnish with parsley if desired! 🌿
