Meatloaf Muffins
Ingredients:
1 lb ground beef
1/2 cup breadcrumbs
1/4 cup milk
1 egg
1/2 cup onion, finely chopped
1/2 cup bell pepper, finely chopped
2 cloves garlic, minced
1 tsp Worcestershire sauce
1 tsp Italian seasoning
Salt and pepper to taste
For the glaze:
1/4 cup ketchup
1 tbsp brown sugar
1/2 tsp garlic powder
1/2 tsp dried thyme
1/2 tsp dried rosemary
Directions:
Preheat oven to 375°F (190°C) and grease a 12-cup muffin tin.
In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, bell pepper, garlic, Worcestershire sauce, Italian seasoning, salt, and pepper. Mix until well combined.
Divide the mixture evenly among the muffin cups, pressing down gently to form muffin shapes.
In a small bowl, whisk together ketchup, brown sugar, garlic powder, thyme, and rosemary to make the glaze.
Brush the glaze over the tops of the meatloaf muffins.
Bake in the preheated oven for 25-30 minutes, or until the meatloaf muffins are cooked through and the glaze is caramelized.
Allow the muffins to cool for a few minutes before serving.
