Budget Beef Magic: Stretch One Pound into a Whole Meal
Ingredients:
1 lb ground beef
2 cups cooked pasta (penne or elbow)
1 small onion, chopped
1 zucchini, diced
1 cup marinara sauce
½ tsp Italian seasoning
Salt & pepper to taste
½ cup shredded mozzarella or cheddar
Fresh basil or parsley (optional)
Directions:
Brown ground beef in a skillet over medium heat. Add onion and zucchini, and cook until soft.
Stir in marinara sauce, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
Add cooked pasta and stir until everything is well combined and heated through.
Sprinkle with cheese, cover the skillet, and let the cheese melt.
Garnish with fresh herbs and serve. Great for families on a budget!
