Spinach and Cheese Stuffed Pasta Rolls with Shrimp

🍝 Ingredients:
For the Stuffed Pasta Rolls:
8 large lasagna noodles (or any wide pasta sheets)
2 cups fresh spinach (or 1 cup frozen, thawed and drained)
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 tsp garlic powder
1/4 tsp ground nutmeg
Salt and pepper to taste
For the Shrimp:
12 large shrimp, peeled and deveined
1 tbsp olive oil
1/2 tsp smoked paprika (or regular paprika)
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
For the Sauce:
1 cup heavy cream
1/2 cup chicken broth or vegetable broth
1 tbsp butter
1 garlic clove, minced
1/4 tsp dried thyme (optional)
Salt and pepper to taste
🔥 Instructions:
1. Cook the Pasta:
Bring a large pot of salted water to a boil. Cook the lasagna noodles until al dente (about 8-10 minutes). Drain and set aside to cool slightly.
2. Prepare the Stuffed Pasta Rolls:
In a large bowl, combine spinach, ricotta, mozzarella, Parmesan, garlic powder, nutmeg, salt, and pepper.
Spread a thin layer of the spinach and cheese mixture along each lasagna noodle. Roll them up tightly.
3. Cook the Shrimp:
Heat olive oil in a pan over medium-high heat. Season shrimp with paprika, salt, and pepper.
Sauté shrimp for 2–3 minutes on each side until pink and cooked through. Set aside.
4. Make the Sauce:
In a small saucepan, melt butter over medium heat. Add garlic and sauté until fragrant (about 1 minute).
Add heavy cream, chicken broth, thyme (optional), salt, and pepper. Bring to a simmer and cook for 5 minutes until slightly thickened.
5. Assemble the Dish:
Preheat the oven to 350°F (175°C).
Spread a small amount of sauce on the bottom of a rectangular baking dish. Place the stuffed pasta rolls in the dish, seam side down.
Pour the remaining sauce over the pasta rolls.
Arrange the shrimp on top of the pasta rolls, sprinkle with a little extra paprika for color, and bake for 20 minutes.
6. Garnish and Serve:
Once baked, sprinkle chopped parsley over the top for a fresh, vibrant finish.
