Cajun Chicken Sloppy Joes
Ingredients:
1 lb chicken breasts, cut into small bite-sized pieces
2 tbsp olive oil
1 tbsp Cajun seasoning
1 tsp paprika
1/2 tsp garlic powder
1/4 tsp cayenne pepper (optional, for extra heat)
Salt and black pepper, to taste
1 cup cheddar cheese, shredded
1/4 cup mayonnaise
1 tbsp Dijon mustard
1 tbsp ketchup
1 tbsp Worcestershire sauce
4 hamburger buns, toasted
Fresh parsley, chopped (for garnish)
Directions:
Heat olive oil in a large skillet over medium heat. Add the chicken pieces and season with Cajun seasoning, paprika, garlic powder, cayenne pepper (if using), salt, and black pepper. Cook for 6–8 minutes, or until the chicken is fully cooked and slightly browned.
In a small bowl, mix together mayonnaise, Dijon mustard, ketchup, and Worcestershire sauce to create the creamy sauce.
Pour the sauce over the cooked chicken and stir to coat evenly. Let it simmer for 2–3 minutes to thicken slightly.
While the chicken is simmering, toast the hamburger buns in a separate skillet or oven until golden brown.
Once the chicken is coated in the sauce, sprinkle the shredded cheddar cheese on top. Let it melt for 1–2 minutes, until gooey and bubbly.
Spoon the cheesy Cajun chicken mixture onto the bottom half of each toasted bun.
Garnish with freshly chopped parsley and place the top half of the bun on top.
Serve immediately, and enjoy the cheesy, saucy goodness!
