For the Cake (4 layers):
โ 12 oz cream cheese, softened (1ยฝ blocks)
โ 2ยผ sticks unsalted butter, softened (18 tablespoons)
โ 2ยผ cups granulated sugar
โ 6 large eggs
โ 1 tbsp lemon zest
โ 3 tbsp fresh lemon juice
โ 3 cups cake flour (or sifted all-purpose)
โ 1 tbsp baking powder
โ ยฝ tsp salt
โ 1ยผ cups buttermilk
โ ยฝ cup purรฉed fresh strawberries ๐
โ 1 tbsp strawberry extract (optional, for bold flavor)
Lemon Cream Cheese Frosting:
โ 12 oz cream cheese, softened
โ ยพ cup unsalted butter, softened
โ 4ยฝ cups powdered sugar
โ 2 tbsp fresh lemon juice
โ 1 tbsp lemon zest
โ 1 tsp vanilla extract
โ Pinch of salt
๐ Instructions
1๏ธโฃ Preheat & Prep:
Preheat oven to 350ยฐF (175ยฐC). Grease and line 4 round cake pans (8 or 9 inch).
2๏ธโฃ Make the Batter:
In a large bowl, beat cream cheese and butter until creamy. Add sugar and mix until fluffy.
Add eggs one at a time, beating well. Mix in lemon juice and zest.
In another bowl, whisk flour, baking powder, and salt.
Alternate adding dry ingredients and buttermilk to the batter. Mix in strawberry purรฉe and extract.

Divide batter evenly between pans.
