The ultimate rustic French comfort dish—slow-cooked beef with tender vegetables.
Ingredients:
• 1 pound beef (chuck or brisket)
• 2 carrots, peeled and chopped
• 2 potatoes, quartered
• 1 leek, sliced
• 1 onion, halved
• 2 bay leaves
• 6 black peppercorns
• Salt to taste
• Water to cover
Instructions:
1. Place beef in a large pot with water, bay leaves, onion, peppercorns, and salt.
2. Simmer for 1.5 hours.
3. Add carrots, potatoes, and leek. Cook until vegetables are tender.
4. Remove beef and slice.
