Teriyaki Salmon Bowl with Quinoa & Roasted Veggies 🐟🥕🥑
Ingredients
For the Salmon:
1 salmon fillet
1 tbsp teriyaki sauce
1/2 tsp sesame oil
1/2 tsp garlic, minced
1/2 tsp ginger, grated
For the Bowl:
1/2 cup cooked quinoa
1/2 cup roasted sweet potatoes
1/4 avocado, sliced
1/4 cup shredded carrots
1 tbsp sesame seeds for garnish
Instructions
1️⃣ Cook the Quinoa: Rinse and cook quinoa according to package instructions.
2️⃣ Prepare the Salmon: Marinate the salmon in teriyaki sauce, sesame oil, garlic, and ginger for 15 minutes. Bake at 375°F (190°C) for 12-15 minutes or until cooked through.
3️⃣ Roast the Sweet Potatoes: Dice sweet potatoes, drizzle with olive oil, and roast at 400°F (200°C) for 20-25 minutes.
4️⃣ Assemble the Bowl: Layer quinoa, roasted sweet potatoes, salmon, avocado, and shredded carrots.
5️⃣ Serve & Enjoy: Garnish with sesame seeds and drizzle with extra teriyaki sauce if desired.
