Halibut with Garlicky Beans 🐟

Ingredients:

• 4 halibut fillets (about 6 oz each)
• 2 tbsp olive oil
• 2 cloves garlic, minced
• 1 can (15 oz) cannellini beans, drained and rinsed
• 1 cup cherry tomatoes, halved
• 1/4 cup fresh parsley, chopped
• Juice of 1 lemon
Salt and pepper to taste

Instructions:

1. Preheat oven to 375°F (190°C).
2. Season halibut fillets with salt and pepper.
3. Heat 1 tbsp olive oil in a large ovenproof skillet over medium-high heat.
4. Add halibut fillets; cook for 3-4 minutes on each side until golden brown.
5. Transfer skillet to the oven; bake for 8-10 minutes until fish is cooked through.
6. In a separate pan, heat remaining olive oil over medium heat.
7. Add minced garlic and cook until fragrant.
8. Stir in cannellini beans and cherry tomatoes; cook for 3-4 minutes until tomatoes soften.
9. Add lemon juice and chopped parsley; season with salt and pepper.
10. Serve halibut fillets over the garlicky beans.
