Gooey Butterscotch Nut Bars
Ingredients:
- 1 (17.5 oz) sugar cookie mix
- 1 (3.4 oz) instant butterscotch pudding mix
- ½ cup butter, softened
- 1 egg
- 1 (14 oz) package caramels
- ½ cup evaporated milk
- 1 cup roasted macadamia nuts
- 1 cup roasted cashews
- 1 tsp vanilla extract
- 1 cup butterscotch chips
Directions:
1. Preheat oven to 350°F (175°C). Grease or line a 9x13-inch baking pan with parchment paper.
2. In a large bowl, combine the sugar cookie mix, instant butterscotch pudding mix, softened butter, and egg. Stir until a dough forms.
3. Press half of the dough evenly into the prepared baking pan.
4. In a medium saucepan over low heat, melt the caramels with the evaporated milk, stirring frequently until smooth.
5. Remove from heat and stir in the roasted macadamia nuts, roasted cashews, and vanilla extract.
6. Pour the caramel and nut mixture evenly over the dough layer in the pan.
7. Crumble the remaining dough over the caramel mixture in small pieces.
8. Sprinkle butterscotch chips evenly on top.
9. Bake for 30-35 minutes, or until the top is golden and bubbly.
10. Allow to cool completely before cutting into bars.

Tips:
Use parchment paper to easily lift the bars out of the pan for clean slicing.
