Ingredients:

- 2 cups full fat cottage cheese
- 4 large eggs
- 4 tbsp sweetener (erythritol, monk fruit sweetener, honey, or maple syrup)
- 1 tsp vanilla extract
- 2 tbsp cornstarch or coconut flour
- 1 1/2 cups berries (fresh or frozen - blueberries, raspberries, cherries)
- 1 tsp lemon zest (optional)

Directions:

1. Preheat oven to 350°F (175°C) and lightly grease a baking dish.
2. In a blender or food processor, combine cottage cheese, eggs, sweetener, vanilla extract, and cornstarch or coconut flour. Blend until smooth and creamy.
3. Gently fold in the berries and lemon zest if using.
4. Pour the batter into the prepared baking dish, spreading evenly.
