Ruth’s Chris Sweet Potato Casserole
Ingredients:
- 3 cups cooked, mashed sweet potatoes (fresh preferred)
- 1 cup granulated sugar
- 1/2 cup softened butter
- 2 large eggs
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1 cup light brown sugar
- 1/2 cup all-purpose flour
- 1 cup chopped pecans
- 1/3 cup melted butter
Directions:
1. Preheat oven to 350°F (175°C).
2. In a large bowl, combine mashed sweet potatoes, granulated sugar, softened butter, eggs, salt, and vanilla extract. Mix until smooth and well blended.
3. Transfer the sweet potato mixture to a greased baking dish and spread evenly.
4. In a separate bowl, mix light brown sugar, all-purpose flour, chopped pecans, and melted butter until crumbly.
5. Sprinkle the pecan topping evenly over the sweet potato mixture.
6. Bake for 30-35 minutes or until the topping is golden brown and the casserole is heated through.
7. Remove from oven and let cool slightly before serving.
