Instructions
Step 1: Create the Marshmallow Mousse

Bloom the gelatin by sprinkling it over ½ cup of cold water. Let it sit for 5 minutes.

In a saucepan, combine sugar, corn syrup, and ¼ cup water. Heat over medium until it reaches 240°F (soft ball stage) on a candy thermometer.

Microwave the bloomed gelatin for 15 seconds to liquefy it.

In a stand mixer, beat the melted gelatin and hot syrup on high for 6–8 minutes, until fluffy and tripled in volume.

Add vanilla extract, salt, and sweetened condensed milk, mixing until smooth.

Melt the white chocolate and butter together, then gently fold into the marshmallow mixture.

Step 2: Swirl the Cosmic Colors

Divide the marshmallow mixture into four bowls. Tint each with gel food coloring (pink, blue, purple, and teal).

Lightly grease silicone molds or a baking dish with vegetable oil.

Layer spoonfuls of each color into the molds, swirling gently with a toothpick for a marbled, galaxy-like effect.

Tap the molds to remove air bubbles and let them set at room temperature for 1 hour.

Step 3: Make the Glossy Galaxy Glaze

Bloom the gelatin in ¼ cup cold water for 5 minutes.

In a saucepan, combine sugar, corn syrup, and ¼ cup water. Heat until simmering, then remove from heat.

Stir in sweetened condensed milk and white chocolate chips until smooth.

Add the bloomed gelatin and mix until fully dissolved.

Divide the glaze into bowls and tint each to match the marshmallow colors.

Step 4: Glaze and Decorate

Unmold the marshmallow clouds and place them on a wire rack over parchment paper.

Pour the colored glaze over each cloud, alternating colors for a cosmic effect.

Sprinkle with edible glitter or star sprinkles while the glaze is still wet.

Let the glaze set for 15 minutes before serving.
