Vegan Breakfast Sausage Dream: Maple Infused, Sweet & Savory!
Ingredients:
- 1 cup cooked green or brown lentils, drained and rinsed (200g)
- 1/2 cup vital wheat gluten (for vegan sausage texture) (50g)
- 1/4 cup nutritional yeast
- 2 tablespoons maple syrup
- 2 tablespoons olive oil
- 1 tablespoon soy sauce or tamari (for gluten-free)
- 1 teaspoon sage
- 1/2 teaspoon thyme
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon black pepper
- Salt to taste
Directions:
1. In a food processor, combine lentils. Pulse a few times until roughly mashed but not fully pureed. You want some texture.
2. Transfer the lentil mixture to a large bowl. Add vital wheat gluten, nutritional yeast, maple syrup, olive oil, soy sauce, sage, thyme, smoked paprika, black pepper, and salt.
3. Mix everything together thoroughly with your hands until well combined and a dough forms. Knead for a few minutes to develop the gluten.
4. Divide the dough into 6-8 equal portions. Shape each portion into sausage links, about 4-5 inches long. You can wrap them in parchment paper and twist the ends to help shape them if desired.
5. Steam the sausages for 20-25 minutes in a steamer basket over boiling water. This helps them firm up.
6. After steaming, you can pan-fry, bake, or grill the sausages to get a nice browned exterior. To pan-fry, heat olive oil in a skillet over medium heat and cook sausages for 5-7 minutes per side, or until browned. To bake, bake at 400°F (200°C) for 20-25 minutes. To grill, grill over medium heat for about 10-15 minutes, turning occasionally.
7. Serve hot on buns, with pancakes, or as part of a vegan breakfast platter.
