Savory Mongolian Ground Beef Noodles

Ingredients:
8 ounces rice noodles or spaghetti
1 tablespoon vegetable oil
1 pound ground beef
3 cloves garlic, minced
1/4 cup soy sauce
1/4 cup hoisin sauce
2 tablespoons brown sugar
1 teaspoon sesame oil
1/2 teaspoon ground ginger
1/4 teaspoon crushed red pepper flakes (optional)
1/2 cup sliced green onions (plus extra for garnish)
1/2 cup shredded carrots
Sesame seeds for garnish
Directions:
Cook the noodles according to package instructions. Drain and set aside.
In a large skillet, heat vegetable oil over medium-high heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain any excess fat.
Stir in the minced garlic and cook for 1 minute until fragrant.
In a small bowl, mix soy sauce, hoisin sauce, brown sugar, sesame oil, ground ginger, and crushed red pepper flakes (if using). Pour the mixture into the skillet with the beef and stir to combine.
Add the cooked noodles to the skillet, tossing them in the sauce until evenly coated.
Stir in green onions and shredded carrots, cooking for an additional 2-3 minutes.
Serve hot, garnished with extra green onions and sesame seeds.
