2 medium Yukon Gold potatoes (about 8-10 oz total), peeled and cubed
½ cup chicken broth (low sodium)
¼ cup heavy cream (optional, for extra creaminess)

1 tbsp fresh parsley, chopped (optional)

Instructions
1. Prepare the Potatoes
Place the cubed potatoes in a medium saucepan.
Add chicken broth and bring to a boil over high heat.
Reduce heat to low, cover, and simmer for 15-20 minutes, or until the potatoes are very tender and easily mashed with a fork.
Drain any remaining liquid from the potatoes.
Return the saucepan to low heat. Mash the potatoes with a fork or potato masher until smooth.
Stir in heavy cream (if using), Parmesan cheese (if using), salt, and pepper to taste. Keep warm.
2. Cook the Garlic Butter Chicken
Pat the chicken breasts dry with paper towels. Season generously with salt, pepper, paprika, and thyme.
Heat butter and olive oil in a large skillet over medium-high heat.
Add the chicken breasts to the skillet and cook for 6-8 minutes per side, or until golden brown and cooked through. The internal temperature should reach 165°F (74°C).
