Ingredients

For the Cake Layers:

1¾ cups all-purpose flour

¾ cup unsweetened cocoa powder

2 cups granulated sugar

1½ tsp baking powder

1½ tsp baking soda

½ tsp salt

2 large eggs

1 cup whole milk

½ cup vegetable oil

2 tsp vanilla extract

1 cup boiling water or hot coffee

For the Fudge Filling:

1 cup semi-sweet chocolate chips

¾ cup heavy cream

1 tbsp butter

For the Ganache Topping:

¾ cup heavy cream

1 cup semi-sweet chocolate chips

1 tbsp corn syrup (optional for shine)

¾ cup mini chocolate chips (for topping)

Instructions

Make the Cake:

1. Preheat oven to 350°F (175°C). Grease and line two 8-inch round pans.

2. In a large bowl, whisk flour, cocoa powder, sugar, baking powder, baking soda, and salt.

3. Add eggs, milk, oil, and vanilla. Beat until smooth.

4. Slowly mix in boiling water or hot coffee—batter will be thin.

5. Pour into pans and bake 30–35 minutes. Cool completely before filling.

Make the Fudge Filling:

1. Heat heavy cream in a saucepan just until simmering.

2. Pour over chocolate chips and butter. Let sit for 2 minutes, then stir until smooth.

3. Chill for 30 minutes until spreadable.

Make the Ganache:

1. Heat cream until just bubbling.

2. Pour over chocolate chips and corn syrup. Stir until glossy and smooth. Let cool slightly.

Assemble the Cake:

Place one cake layer down and spread with the fudge filling.

Top with the second layer.

Pour ganache over the top and gently spread.

Sprinkle mini chocolate chips generously on top.

Chill for 30 minutes to set.
