Strawberry Cheesecake Eggrolls
Ingredients:
For the filling:
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1/2 tsp vanilla extract
- 1 cup strawberries, hulled and diced
For the egg rolls:
- Egg roll wrappers
- Oil for frying (vegetable or canola)
- Cinnamon sugar (optional, for dusting)
Instructions:
1. Prepare the filling:
- In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
- Gently fold in the diced strawberries.
2. Assemble the egg rolls:
- Place an egg roll wrapper on a clean surface. Spoon about 2 tablespoons of the cheesecake filling onto the center of the wrapper.
- Fold the bottom corner over the filling, then fold in the sides and roll it up tightly. Seal the edge with a little water.
3. Fry the egg rolls:
- Heat oil in a deep skillet or fryer to 350°F (175°C).
- Carefully place a few egg rolls in the hot oil, cooking them until they are golden brown and crispy, about 2-3 minutes.
- Remove and drain on paper towels.
4. Serve:
- Dust with cinnamon sugar if desired. Serve warm, either plain or with a drizzle of chocolate or strawberry sauce.
You can replace the strawberry with blueberries or other fruits and enjoy!
