DELICIOUS DATE COFFEE LOAF CAKE
Ingredients
For the Loaf:
1½ cups chopped pitted dates
1 cup strong brewed coffee (hot)
1 tsp baking soda
½ cup unsalted butter, softened
½ cup brown sugar
2 large eggs
1 tsp vanilla extract
1¾ cups all-purpose flour
1 tsp baking powder
½ tsp cinnamon
¼ tsp salt

For the Coffee Caramel Glaze:
½ cup brown sugar
¼ cup heavy cream
2 tbsp brewed coffee
2 tbsp butter
Pinch of salt

For Garnish:
½ cup chopped toasted walnuts or pecans
Extra drizzle of glaze

Instructions
1. Soften the Dates:
Combine chopped dates, hot coffee, and baking soda. Let soak and cool for 10–15 minutes. This helps soften and sweeten the loaf.

2. Prepare the Batter:
1. Preheat oven to 350°F (175°C). Grease and line a 9x5-inch loaf pan.
2. In a bowl, cream butter and brown sugar until light and fluffy.
3. Add eggs one at a time, then stir in vanilla.
4. Mix flour, baking powder, cinnamon, and salt.
5. Add dry ingredients to the creamed mixture alternately with the date-coffee mixture. Mix until just combined.

3. Bake the Loaf:
Pour into prepared pan.
Bake for 45–55 minutes, or until a toothpick inserted comes out clean.
Cool in pan for 10 minutes, then transfer to a wire rack.

4. Make the Coffee Caramel Glaze:
In a saucepan, combine brown sugar, cream, butter, and coffee.
Simmer gently for 3–4 minutes, stirring until smooth and slightly thickened. Remove from heat and cool slightly.

5. Glaze & Garnish:
Pour the warm glaze over the cooled loaf.
Top with chopped walnuts and a second drizzle of glaze.
