🍞 Italian Cheesy Meatball Marinara Toast
Ingredients (Makes 2–4 servings)
For the meatballs:
1 lb ground beef (or a mix of beef and pork)
¼ cup breadcrumbs
¼ cup grated Parmesan cheese
1 egg
2 cloves garlic, minced
2 tbsp chopped fresh parsley (or 1 tsp dried)
½ tsp salt
¼ tsp black pepper
For the sauce:
1½ cups marinara or pasta sauce
1 tsp Italian seasoning (optional)
Salt and pepper to taste
For the toast:
4 thick slices of crusty bread (like sourdough or ciabatta)
1 tbsp olive oil or butter
1 cup shredded mozzarella or Italian blend cheese
Grated Parmesan and parsley for garnish
Instructions
Make the meatballs:
Preheat oven to 400°F (200°C).
In a bowl, combine all meatball ingredients and mix until just combined.
Form into golf ball-sized meatballs and place on a baking sheet.
Bake for 15–20 minutes, or until fully cooked through.
Simmer in sauce:
In a saucepan, heat marinara sauce and season if needed.
Add baked meatballs and simmer for 5–10 minutes to soak up flavor.
Toast the bread:
Brush bread slices with olive oil or butter.
Toast in a skillet or under a broiler until golden and crisp.
Assemble the toast:
Place toasted bread on a baking sheet.
Spoon marinara sauce and 2–3 meatballs onto each slice.
Sprinkle generously with shredded mozzarella.
Melt the cheese:
Broil or bake at 400°F (200°C) for 5 minutes, or until cheese is melted and bubbly.
Serve hot:
Top with extra Parmesan and fresh parsley.
