Grilled Steak Tacos with Corn Salad
Ingredients:
4 small flour tortillas
1 lb medium-rare grilled steak (sliced thinly)
1 cup corn kernels (fresh or frozen)
½ cup diced red onion
¼ cup fresh cilantro (chopped)
2 tablespoons sour cream or mayonnaise
1 tablespoon lime juice
1 teaspoon chili powder
Salt and pepper to taste
1 tablespoon olive oil
Instructions:
Heat a skillet over medium heat and lightly toast the tortillas until golden brown on both sides.
In a bowl, mix the corn kernels, red onion, cilantro, sour cream (or mayo), lime juice, chili powder, salt, and pepper to create the corn salad.
Warm the sliced steak if needed.
Assemble the tacos by placing the warm steak slices on each tortilla, then topping with the corn salad mixture.
Serve with extra lime wedges on the side. Enjoy!
