This cheesy Salsa Chicken is perfect for a quick, flavorful dinner! 🧀🍗 A little spice, lots of flavor!
Ingredients:
4 boneless, skinless chicken breasts
1 cup salsa (your choice of mild, medium, or hot)
1 cup shredded cheddar or Mexican blend cheese
1 tablespoon olive oil
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
Fresh cilantro, chopped (optional for garnish)
Sour cream and avocado slices (optional for serving)
Directions:
1- Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil.
2- In a small bowl, mix cumin, chili powder, garlic powder, onion powder, salt, and pepper. Rub this spice mixture evenly on both sides of the chicken breasts.
3- Place the chicken in the prepared baking dish and pour the salsa evenly over the top.
4- Bake for 25-30 minutes, or until the chicken is cooked through (internal temperature reaches 165°F).
5- Remove from the oven and sprinkle the shredded cheese over the chicken. Return to the oven for an additional 3-5 minutes, or until the cheese is melted and bubbly.
6- Garnish with fresh cilantro and serve with sour cream and avocado slices if desired.
