Seared Beef Bites with Roasted Baby Potatoes and Thyme .
Ingredients:
1 lb beef sirloin, cut into bite-sized cubes
1 lb baby potatoes, halved
2 tablespoons olive oil, divided
1 tablespoon unsalted butter
4 cloves garlic, minced
1 teaspoon smoked paprika
1 tablespoon fresh thyme leaves (or 1 tsp dried thyme)
Salt and freshly cracked black pepper, to taste
Optional: fresh parsley, chopped, for garnish
Directions:
Preheat oven to 400°F (200°C).
Toss baby potatoes with 1 tablespoon olive oil, thyme, paprika, salt, and pepper. Spread on a baking sheet in a single layer.
Roast potatoes for 25-30 minutes, flipping halfway through, until golden and tender.
While potatoes roast, season beef bites with salt and pepper.
Heat remaining 1 tablespoon olive oil and butter in a large skillet over medium-high heat.
Add beef bites and sear for 2-3 minutes per side until browned and cooked to your desired doneness.
In the final minute, stir in minced garlic and cook until fragrant.
Remove from heat, let rest for 2 minutes.
Plate beef bites alongside crispy baby potatoes. Garnish with fresh parsley and a few extra thyme sprigs if desired.
