Homemade Savory Almond Crackers Perfect with Dips and Cheese 🥑🧀

Ingredients:
2 cups (200g) almond flour, finely ground
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon dried herbs (e.g., rosemary, thyme, Italian blend - optional)
1 large egg white (or 1 flax egg: 1 tbsp flaxseed meal + 3 tbsp water, let sit 5 min)
2 tablespoons (30ml) olive oil or melted coconut oil
1-2 tablespoons (15-30ml) water, if needed

Directions:
1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a bowl, whisk together the almond flour, salt, pepper, and dried herbs (if using).
3. In a separate small bowl, lightly whisk the egg white (or prepare flax egg). Stir in the olive oil.
4. Add the wet ingredients to the dry ingredients and mix until a dough starts to form. If the dough seems too dry or crumbly, add water 1 tablespoon at a time until it holds together.
5. Place the dough between two sheets of parchment paper and roll it out very thinly (about 1/16 to 1/8 inch or 1.5-3mm thick).
6. Remove the top parchment paper. Slide the bottom parchment with the dough onto the baking sheet.
7. Score the dough into cracker shapes using a pizza cutter or knife. Prick each cracker with a fork a couple of times (optional, helps prevent puffing).
8. Bake for 10-15 minutes, or until the edges are golden brown and the crackers are firm. Keep a close eye on them as almond flour can brown quickly.
9. Let cool completely on the baking sheet or a wire rack before breaking apart. They will crisp up as they cool.
