SAVORY SWEET POTATO & QUINOA BOWL WITH LEMON TAHINI DRESSING 🥗🍠🍋
Ingredients:
1 cup quinoa, rinsed
2 cups vegetable broth or water
1 cup cherry tomatoes, halved
2 medium sweet potatoes, peeled and diced
1 teaspoon paprika
1 teaspoon garlic powder
2 tablespoons olive oil
Salt and pepper to taste
1 cup spinach or kale, chopped
1/4 cup fresh parsley, chopped (for garnish)
For the Lemon Tahini Dressing:
1/4 cup tahini
2 tablespoons lemon juice
1 tablespoon maple syrup or honey
1 garlic clove, minced
Water to thin, as needed
Salt to taste
Instructions:
Roast the Sweet Potatoes: Preheat oven to 400°F. Toss the diced sweet potatoes with olive oil and spices. Roast for 25-30 minutes.
Cook the Quinoa: Rinse quinoa and cook with vegetable broth for a fluffy texture.
Make the Lemon Tahini Dressing: Whisk together tahini, lemon juice, maple syrup, garlic, and salt. Add water to achieve desired consistency.
Assemble the Bowl: Combine quinoa, roasted sweet potatoes, tomatoes, and greens. Drizzle with dressing and garnish with parsley.
