Garlic Herb Roasted Veggies
Ingredients:
2 cups broccoli florets
2 cups cauliflower florets
2 cups carrots, sliced
1 red bell pepper, chopped
1 yellow bell pepper, chopped
4 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
Salt and pepper to taste
Fresh parsley for garnish
Directions:
Preheat your oven to 425°F (220°C). Prepare a large baking sheet by lining it with parchment paper for easy cleanup.
In a large mixing bowl, combine the broccoli, cauliflower, carrots, and bell peppers. Drizzle the olive oil over the vegetables and add the minced garlic, oregano, thyme, salt, and pepper. Toss everything together until the veggies are well coated with the oil and seasonings.
Spread the seasoned vegetables evenly on the prepared baking sheet in a single layer. This ensures they roast evenly and get that perfect golden color.
Roast in the preheated oven for about 25-30 minutes, stirring halfway through, until the vegetables are tender and slightly caramelized.
Once done, remove from the oven and let them cool for a few minutes. Garnish with fresh parsley before serving.
