Tropical Lemon Coconut Cheesecake Delights
Recipe: Ingredients:
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1 cup all-purpose flour
1/2 cup shredded coconut
1/4 cup lemon juice
1 tablespoon lemon zest
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1/4 teaspoon baking soda
4 oz cream cheese, softened
1/2 cup powdered sugar
Directions:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add in the flour, shredded coconut, lemon juice, lemon zest, vanilla extract, salt, and baking soda. Mix until well combined.
Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spaced about 2 inches apart.
In a separate bowl, beat the softened cream cheese with powdered sugar until smooth and creamy.
Flatten each cookie dough ball slightly and add a small dollop of the cream cheese mixture to the center of each cookie.
Bake for 10-12 minutes, or until the edges are lightly golden.
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
