Chicken Cordon Bleu Meatloaf 🍗🧀

Ingredients:

1 lb ground chicken

1/2 lb thinly sliced turkey ham

1 cup breadcrumbs

1/2 cup milk

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon onion powder

1 tablespoon Dijon mustard

1 tablespoon olive oil

6 slices Swiss cheese (or your choice of cheese)

1 tablespoon fresh parsley, chopped (optional)

Directions:

Preheat the oven to 375°F (190°C).

In a large bowl, combine ground chicken, breadcrumbs, milk, Parmesan cheese, garlic powder, salt, pepper, and onion powder. Mix until well combined.

Place the chicken mixture onto a sheet of parchment paper and shape it into a loaf.

Layer the turkey ham slices evenly over the meatloaf, then place the Swiss cheese slices on top of the ham.

Carefully roll the meatloaf, folding the ham and cheese inside the chicken mixture. Seal the edges to prevent the filling from spilling out.

Place the meatloaf in a greased baking dish or on a baking sheet and brush with Dijon mustard and olive oil for extra flavor and shine.

Bake for 40-45 minutes, or until the meatloaf reaches an internal temperature of 165°F (75°C).

Let it rest for 5 minutes before slicing. Garnish with fresh parsley if desired, and serve!
