Ingredients:
Cake Batter:
- ¾ cup all-purpose flour
- ¾ tsp baking powder
- ¼ tsp salt
- 4 large eggs, room temperature
- ¾ cup granulated sugar
- 1 tsp vanilla extract
- 2 tbsp vegetable oil
- 3-4 drops pastel food coloring (pink, yellow, blue, purple)

- 8 oz cream cheese, softened
- ½ cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream, cold

Directions:
1. Preheat & Prep:
- Preheat oven to 350°F (175°C).
- Line a 10x15-inch jelly roll pan with parchment paper and lightly grease.
2. Make the Cake Batter:
1. In a small bowl, whisk together flour, baking powder, and salt.
2. In a large bowl, beat eggs until foamy (about 2 minutes).
3. Gradually add sugar and beat until thick and pale (another 2-3 minutes).
4. Stir in vanilla and oil.
5. Gently fold in the dry ingredients until combined.
3. Create Pastel Swirls:
1. Divide the batter into 4 bowls.
2. Tint each bowl with a few drops of pastel food coloring (pink, blue, yellow, purple).
3. Drop spoonfuls of each color randomly into the pan.
4. Use a toothpick or skewer to swirl the colors together gently for a marbled effect.
4. Bake & Roll:
- Bake for 10-12 minutes, or until the top springs back when touched.
- Immediately turn the cake onto a clean kitchen towel dusted with powdered sugar.
- Peel off the parchment and gently roll the cake (with the towel) starting at the short end.
- Cool completely in the rolled shape.
5. Make the Filling:
- Beat cream cheese, powdered sugar, and vanilla until smooth.
- In a separate bowl, whip heavy cream to stiff peaks.
- Gently fold the whipped cream into the cream cheese mixture until light and fluffy.
6. Assemble the Cake Roll:
- Carefully unroll the cooled cake.
- Spread the filling evenly across the cake, leaving a small border around the edges.
- Re-roll the cake (without the towel) and place seam side down.
7. Decorate & Serve:
- Dust with powdered sugar, drizzle with white chocolate, or sprinkle with pastel sprinkles for a festive touch.
