Grilled Chicken & Avocado Salad Bowl 🥑

Ingredients:
2 chicken breasts, boneless & skinless
1 tablespoon olive oil
1 teaspoon garlic powder
½ teaspoon paprika
½ teaspoon salt
¼ teaspoon black pepper
4 cups mixed greens (romaine, spinach, arugula, etc.)
1 avocado, sliced
1 cup cherry tomatoes, halved
½ cup cucumber, sliced
¼ cup red onion, thinly sliced
¼ cup feta cheese (optional)
¼ cup toasted almonds or pumpkin seeds
Lemon wedges, for serving
Dressing:
3 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon honey
1 teaspoon Dijon mustard
½ teaspoon garlic powder
Salt & pepper, to taste
Directions:
Marinate & Grill Chicken:

Rub chicken breasts with olive oil, garlic powder, paprika, salt, and black pepper.
Preheat a grill or pan over medium-high heat.
Cook chicken for 5-6 minutes per side, or until fully cooked. Let it rest for 5 minutes, then slice.
Prepare Dressing:

In a small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, garlic powder, salt, and pepper.
Assemble Salad:

In a large bowl, arrange mixed greens, sliced avocado, cherry tomatoes, cucumber, red onion, feta cheese, and toasted almonds.
Add Chicken & Dressing:

Top with sliced grilled chicken and drizzle with dressing.
Serve:

Toss gently and serve with lemon wedges on the side.
