A light chocolate sponge rolled with whipped cream & cherries β a decadent twist on a classic fave!
π§ Ingredients (US Measuring Cups):
For the Chocolate Sponge Cake:
ΒΎ cup all-purpose flour
ΒΌ cup unsweetened cocoa powder
1 tsp baking powder
ΒΌ tsp salt
4 large eggs
Β½ cup granulated sugar
ΒΌ cup vegetable oil
1 tsp vanilla extract
2 tbsp milk
For the Filling:
1 cup heavy whipping cream
2 tbsp powdered sugar
1 tsp vanilla extract
ΒΎ cup cherry pie filling or chopped sweet cherries
For Garnish (Optional):
Extra whipped cream
Chocolate shavings
Whole cherries

π Stage 1: Make the Chocolate Sponge
Preheat oven to 350Β°F (175Β°C). Line a 10x15 inch jelly roll pan with parchment paper.
In a bowl, whisk flour, cocoa powder, baking powder, and salt.
In another large bowl, beat eggs and sugar with a hand mixer until thick and pale (about 5 minutes).
Add oil, vanilla, and milk to the egg mixture; mix gently.
Sift dry ingredients into wet mixture and fold until just combined.
Pour batter into the prepared pan, spread evenly.
Bake for 10β12 minutes or until sponge springs back when touched.
π Stage 2: Roll the Cake
While warm, carefully flip the cake onto a clean kitchen towel dusted with powdered sugar.
Peel off parchment paper and gently roll the cake (with the towel) from the short end.
Let it cool completely rolled up β this helps it keep the shape without cracking.
π Stage 3: Make the Cream & Assemble
In a cold bowl, beat whipping cream, powdered sugar, and vanilla until stiff peaks form.
Unroll the cooled cake. Spread whipped cream evenly over it, then add cherry filling.
Gently re-roll the cake (without towel) and place seam side down.
Chill for 30β60 minutes before serving.

Dust with powdered sugar, top with extra whipped cream, cherries, and chocolate shavings if desired.
