Quick and Easy Crustless Quiche with Avocado, Bacon, and Feta
Ingredients:
6 large eggs
1 cup heavy cream
1/2 avocado, diced
1/2 cup cooked bacon, crumbled
1/2 cup feta cheese, crumbled
1/4 cup green onions, chopped
Salt and pepper to taste
1 tbsp olive oil (for sautéing)
Directions:
Preheat your oven to 350°F (175°C) and grease a 9-inch pie or quiche dish.
In a skillet, heat olive oil over medium heat. Add the cooked bacon, avocado, and green onions, and sauté for 2-3 minutes.
In a large bowl, whisk together the eggs, heavy cream, salt, and pepper. Stir in the sautéed ingredients and crumbled feta cheese.
Pour the mixture into the prepared quiche dish. Bake for 25-30 minutes or until the quiche is set and golden on top.
