ingredients:
- 1 ½ cups warm water (105-115°F) | 360ml
- 1 teaspoon sugar | 4g
- 2 ¼ teaspoons active dry yeast | 7g
- 2 cups chickpea flour | 200g
- ½ cup tapioca starch | 60g
- 2 tablespoons olive oil, plus more for drizzling | 30ml
- 1 teaspoon dried rosemary | 2g
- 1 teaspoon dried thyme | 2g
- ½ teaspoon garlic powder | 1g
- ¾ teaspoon salt | 4g
- Flaky sea salt, for topping (optional)

directions:
1. In a large bowl, combine the warm water and sugar. Sprinkle the yeast over the top and let it sit for 5-10 minutes until foamy.
2. In a separate bowl, whisk together the chickpea flour, tapioca starch, dried rosemary, dried thyme, garlic powder, and salt.
3. Add the dry ingredients to the wet ingredients and stir with a wooden spoon or spatula until a thick, sticky dough forms.
4. Stir in the 2 tablespoons of olive oil.
5. Cover the bowl with plastic wrap or a damp cloth and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
6. Preheat your oven to 400°F (200°C). Grease a baking sheet or a 9x13 inch baking pan with olive oil.
7. Gently transfer the dough to the prepared baking sheet or pan. It will be sticky. Use lightly oiled hands to spread the dough evenly.
8. Drizzle generously with more olive oil and sprinkle with flaky sea salt (if using).
