Hearty Vegetable and Pasta Soup
Ingredients:
1 cup small pasta (ditalini or similar)
2 cups diced carrots
1 cup diced celery
1 cup diced potatoes or squash
1 can (14 oz) diced tomatoes
1 cup chopped greens (spinach, kale, or chard)
1 small onion, diced
4-5 cups vegetable broth
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
Instructions:
In a large pot, sauté onion, garlic, carrots, and celery until softened.
Add broth, diced tomatoes, potatoes, and pasta. Bring to a boil.
Reduce heat and simmer until pasta and vegetables are tender (about 15-20 minutes).
Stir in greens, oregano, basil, salt, and pepper; cook until greens wilt.
Serve hot.
