Instructions

Make the pastry cream:
Warm milk in a saucepan over medium heat until steaming (do not boil).
In a bowl, whisk egg yolks, sugar, and cornstarch until smooth and pale.
Slowly drizzle Β½ cup hot milk into the yolk mixture while whisking constantly to temper.
Pour the tempered mixture back into the saucepan. Cook over medium heat, whisking continuously, until thickened and bubbling (3–5 minutes).
Remove from heat; stir in butter and vanilla until fully incorporated.
Transfer to a bowl, cover with plastic wrap pressed directly onto the surface, and chill for at least 1 hour.
Prepare the rolls:
Using a small paring knife, cut a 1-inch circle from the top of each roll to create a β€œlid.”
Gently scoop out a small amount of the soft interior, leaving a ΒΌ-inch shell. Keep the lids intact.
Fill the rolls:
Once chilled, spoon or pipe the pastry cream into a piping bag (or snip a corner from a zip-top bag).
Fill each hollowed roll generously with cream. Replace the lids for a seamless look, or leave open for a rustic finish.
Make the glaze:
Heat heavy cream in a small saucepan until just steaming.
Pour over chocolate chips in a heatproof bowl; let sit 2–3 minutes.
Add butter and corn syrup (if using); whisk until smooth and glossy.
Glaze and serve:
Spoon or dip the tops of the filled rolls into the warm glaze.
Let set at room temperature for 10 minutes.
Garnish with powdered sugar, whipped cream, or berries if desired.
Serve chilled or at room temperature.
