Copy-Cat Cracker Barrel Hashbrown Casserole
Ingredients
3 cups Colby Cheese
1 pound Hashbrowns
½ Yellow Onion finely diced
1 can Cream of Chicken Soup
¼ cup Unsalted Butter melted
Salt & Black Pepper to taste
Instructions
Prep Work: Preheat the oven to 350°F. Shred the Colby cheese, finely dice the onion, and melt the butter.
In a 7x11 casserole dish, combine the melted butter, cream of chicken soup, and diced onions,. Stir until everything is well mixed, then add the hashbrowns and 2 cups of cheese on top and fold them in until evenly combined. Top with the remaining cheese.
Bake at 350°F for 45–50 minutes, until the top is lightly golden. Let the casserole rest for 15 minutes before serving, then enjoy!
