Chocolate Covered Mint Patties
Ingredients:
- 1/3 cup light corn syrup
- 5 tablespoons butter, softened
- 1 1/2 teaspoons mint extract
- 1/2 teaspoon salt
- Green food coloring (start with a couple drops and add more until desired color is achieved)
- 4-5 cups powdered sugar
- 10 oz chocolate candy coating (such as CandiQuik)
Directions:
1. In a large mixing bowl, combine the light corn syrup, softened butter, mint extract, and salt. Mix well until smooth.
2. Add green food coloring a few drops at a time until the desired shade of green is reached.
3. Gradually add powdered sugar, one cup at a time, mixing thoroughly after each addition until a firm dough forms that is not sticky to the touch.
4. Roll the dough into small balls or flatten into patties with your hands or a rolling pin on a surface lightly dusted with powdered sugar.
5. Place the patties on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
6. Melt the chocolate candy coating according to the package instructions.
7. Using a fork or dipping tool, dip each mint patty into the melted chocolate, ensuring it is fully coated.
8. Place the coated patties back on the parchment paper and refrigerate until the chocolate is set.
9. Store the mint patties in an airtight container in the refrigerator.
