Heavenly Raspberry White Chocolate Mousse Parfait
Ingredients:
- 8 oz white chocolate, chopped
- 1 1/2 cups heavy whipping cream, divided
- 1 cup fresh raspberries
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup crushed graham crackers
- Fresh mint leaves for garnish (optional)
Directions:
1. Melt the white chocolate in a heatproof bowl over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.
2. In a large bowl, whip 1 cup of heavy cream with powdered sugar and vanilla extract until stiff peaks form.
3. Gently fold the melted white chocolate into the whipped cream until fully combined.
4. In a separate bowl, lightly mash the raspberries to release some juice but keep some texture.
5. Whip the remaining 1/2 cup of heavy cream until soft peaks form.
6. Layer the parfait starting with crushed graham crackers at the bottom of serving glasses.
7. Add a layer of raspberry mash, followed by a layer of white chocolate mousse, then a layer of whipped cream.
8. Repeat layers as desired, finishing with a dollop of whipped cream and a few whole raspberries on top.
9. Refrigerate for at least 2 hours before serving for the mousse to set and flavors to meld.
