1 tbsp butter
1 tbsp flour
200 ml milk
100 g grated cheddar or gouda
Salt, pepper, nutmeg
Optional: 1 tbsp cream cheese for extra creaminess
👨🍳 Instructions:
Prepare the potatoes:
Wash the small potatoes thoroughly (no need to peel).
Toss with olive oil, herbs, salt, and pepper.
Spread on a baking sheet and roast at 200 °C (392 °F) for 25–30 minutes until golden and crisp.
Cook the chicken:
Rub the chicken breasts with oil, paprika, garlic powder, salt, and pepper.
Grill in a grill pan or skillet for about 5–6 minutes per side, until nicely browned and fully cooked.
Slice into strips.
Make the mac & cheese:
Cook pasta in salted water until al dente.
In a saucepan, melt butter, whisk in flour, and cook briefly.
Gradually pour in the milk, stirring constantly to make a smooth sauce.
Stir in the cheese and season with salt, pepper, and nutmeg.
Fold in the cooked pasta. Add cream cheese if using.
Assemble the plate:
Arrange the roasted potatoes, creamy mac & cheese, and grilled chicken slices in a bowl or on a plate.
Garnish with fresh parsley and serve hot.
✅ Notes & Variations:
Swap the cheese with Parmesan or Emmental for a flavor twist.
Add crispy bacon bits to the mac & cheese for crunch.
Vegetarian option: use grilled halloumi or smoked tofu instead of chicken.
